What's the news on Salmon?

Great article in July 2008 Saveur on Salmon. I'd like to post a picture here, but I'm not sure what the copy right issues are! In a nut shell, the articles explain that farmed Salmon may be getting better and better in order to compete with wild salmon. And, the article introduces a new (or new to me, anyway) source of Alaskan Salmon. It's not just from Copper River anymore. The Yukon-Kuskokwim Delta (well, maybe that's in Canada?) is now supplying some really high quality wild salmon through a company the fisherman called Kwik'Pak fisheries. Check out the website (and, by the way, they are located in Alaska. I checked the map!)

Cheese, Glorious Cheese!

Great long look at cheese in the September 30th Wine Spectator.  This thorough piece lists 100 cheeses by country with a brief description of each as well as four wine/cheese pairing plates. Included are a few cheese recipes and some great places to pick up cheeses.
One of the major things that is missing from the article is the region/locale of the cheese maker within its given country.  A map of the cheese makers might also have been useful.
